This would make a great hors d'oeuvre for Thanksgiving. I made this for my event on Friday.
Bruschetta with Goat Cheese and Roasted Butternut Squash
Peel and seed a fresh butternut squash and cut it into small 1/4" to 1/2" cubes.
In a bowl toss squash with 3 tablespoons olive oil, 1 tablespoon each of finely minced fresh rosemary and thyme and salt and pepper to taste.
Spread on a parchment lined baking sheet and bake at 425 degrees for 25 minutes or until fork tender. Let cool.
Slice a fresh baguette on the bias, spread with plain goat cheese, and top with the roasted butternut squash.
