Velvet Mushrooms


Since the pandemic began, mushrooms have emerged as a strong decorating trend, symbolizing resilience, renewal, and strength. As a gardener, I love seeing these beautiful works of nature, signs of healthy soil containing lots of organic matter. With fall approaching, I thought it would be fun to look at some ways to incorporate mushrooms into your home decor (and your wardrobe). And my favorite mushroom recipe too.

Growing up, one of my favorite dinners was when my mother made Mushrooms Polonaise. It is surprisingly easy to make and delicious and I still make it all these years later. This can be served as a vegetable side dish or as a meatless entree.

Mushrooms Polonaise

INGREDIENTS

1 1/2 lb mushrooms, sliced
1 onion, chopped
3/4 cup butter
2 tbsp flour
1 cup sour cream
1 cup heavy cream
1/2 tsp nutmeg
Pepper
1/2 cup parsley, chopped
1/4 cup bread crumbs

PREPARATION

Preheat oven to 350F. Place mushrooms and onion in a heavy nonstick skillet with a tiny bit of olive oil. Cook slowly until wilted but not browned. Add 1/2 cup of butter. When butter has melted, add flour and cook, stirring constantly, for 5 minutes over very low heat. Stir in sour cream and heavy cream with a wooden spoon, then add nutmeg and pepper to taste. Continue to cook, uncovered until mixture has thickened. Stir in parsley. In another pan, lightly saute bread crumbs in 1/4 cup of butter. Pour mushroom mixture into a buttered shallow casserole. Sprinkle top with sauteed bread crumbs. Bake until mixture has set and bread crumbs have browned a little more, about 30 minutes.

Serves 4 (entree) or 8 (side dish)

On another subject, many of you are following my new car project. It took an unexpected turn yesterday (in a good way) and I hope to have things finalized today and will update soon.

  1. The wicker mushrooms are so much fun, and the ceramic plates are wonderful. I believe it's Flora Danica that makes a china pattern with mushrooms, but it's very $$$. I'm loving all of the wicker decor that is out there now.

    2. Following up. I prepared the mushrooms polonaise, and it turned out really well. I am a household of one, so I froze about half of the total prepared, in small serving containers. It was just as good on thawing as the day it was baked. Thank you again for sharing this special dish.
