Make sure that you eat it. We Aussie love to bake pumpkin to have with a roast leg of lamb. You don't have to peel it, just cut it into wedges and toss it in olive oil, with a crunch of pepper and a sprinkle of salt. Alternatively, make it into ginger and pumpkin soup by cooking a chopped up leek in butter, grate some fresh ginger, and add the peeled and chopped pumpkin. Cover with a good chicken stock, or vegetable stock if you are vegetarian, and cook till soft. Blitz into a puree and add some cream and some freshly grated nutmeg. Being a Queensland Blue, you could always bake Flo's Pumpkin scones (Biscuits to you), or roast the pumpkin without the pepper and salt but a sprinkle of brown sugar, puree the cooked pumpkin and freeze to use in pumpkin pie for your Thanksgiving feast. It should keep whole like that for a few more weeks as it has it's stalk still on it. Enjoy your taste of Australia. BTW, you can wash the seeds and plant them next year if you have space in the back of your garden. They are easy to grow and usually will grow out of the compost if you have one and have thrown the seeds into it!Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-2395859504434574133.post-13438705220019032692020-10-17T09:16:51.803-04:002020-10-17T09:16:51.803-04:00Spooky!
